Herb and Vegetable Vinaigrette

1/3 cup extra-virgin olive oil

1/4 cup minced fresh parsley

1/4 cup chopped green or red bell peppers

1/4 cup minced or shredded carrot

2 tablespoons brown rice vinegar

2 tablespoons fresh lemon juice

1/2 teaspoon crushed garlic

1/4 teaspoon dried basil

1/4 teaspoon dried oregano

1/4 teaspoon dried tarragon

1/4 teaspoon salt

 

Combine all the ingredients in a blender, and process until very smooth.
