This is a nice alternative to potato latkes for Chanukah or anytime.

Zucchini Latkes

Amount Measure Ingredient -- Preparation Method

4 cups zucchini (about 2 large) -- grated

1 cup parsley -- chopped

1 teaspoon lemon pepper

1/4 teaspoon salt

2 eggs -- lightly beaten

3 tablespoons matzo meal -- or more if needed

oil for frying

 

In a large bowl, mix together all ingredients except oil. Drop by

tablespoonfuls to form 3 inch latkes and fry in hot oil until golden brown on

each side.
