Miriam * Exported from MasterCook * Zucchini Latkes Recipe By :Pearl Roseman Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups zucchini (about 2 large) -- grated 1 cup parsley -- chopped 1 teaspoon lemon pepper 1/4 teaspoon salt 2 eggs -- lightly beaten 3 tablespoons matzo meal -- or more if needed oil for frying In a large bowl, mix together all ingredients except oil. Drop by tablespoonfuls to form 3 inch latkes and fry in hot oil until golden brown on each side.
