The nuts that float have air spaces and are not full of meat. Heat your oven to 400 degrees F. Cut the chestnuts completely around the middle, through the outer and inner skin. Place on a cookie sheet with sides or in a roasting pan and sprinkle with water. Roast for 25 to 30 minutes, until cooked through. Peel when just cool enough to handle. They really taste best when right out of the oven, so don't make more than you can eat. I have over 700 cookbooks but wasn't able to find a recipe for roasting chestnuts like the ones I've had in New York's Rockefeller Center while looking at the big Christmas tree.
