Green Beans with Shallots and Red Bell Pepper

2 pounds fresh green beans

1/3 cup butter or margarine

3 large shallots -- chopped

1 large red bell pepper -- cut into thin strips

1 teaspoon kosher salt

1/2 teaspoon pepper

1/2 teaspoon garlic powder

 

Cook beans in boiling water to cover 3 to 4 minutes or until crisp-tender;

drain.

 

Melt butter in a large skillet over medium-high heat.

 

Add shallots and bell pepper to skillet; saute 4 minutes or until tender. Add

to beans; toss with salt, pepper, and garlic powder.
