Simple Tahini Dressing

1/3 cup tahini

1 tablespoon fresh lemon or lime juice

1 tablespoon tamari soy sauce

1/4 teaspoon crushed garlic

1/3 cup water, more or less as needed

1 tablespoon minced fresh parsley

 

Combine the tahini, lemon or lime juice, soy sauce, and garlic in a small bowl,

mixing well to make a thick paste. Gradually stir or whisk in the water,

beating well after each addition until smooth, using just enough to achieve the

desired consistency. Stir in the parsley.
