I noted only a few differences in the introductions: either none or rewritten for a few recipes. What's nice about the new series? pictures. tantalizing pictures. to see pictures of the covers for the current set of books http://www.simonsays.com/subs/index.cfm?areaid=43 * Exported from MasterCook * Tart Greens with Apples, Pecans and Buttermilk Honey Dressing Recipe By :Rombauer's New Joy of Cooking Serving Size : 6 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- BUTTERMILK HONEY DRESSING: 1/4 cup cider vinegar 1/4 cup sour cream 1/4 cup buttermilk 3 tablespoons honey 1 teaspoon minced garlic 1 scallion -- minced pinch ground red pepper salt and pepper to taste ADD LAST: 1/2 cup olive oil SALAD: 4 cups bite-sized pieces arugula -- washed and dried 1 small head radicchio -- washed, dried and torn into bite-sized pieces 2 belgian endives -- washed, dried and sliced lengthwise into long strips GARNISH: 2 granny smith apples -- cored and very thinly sliced or other tart apples 1/2 cup pecan halves -- toasted Dressing: combine with a whisk all the ingredients for the dressing except the oil. Add the oil in a slow, steady stream, whisking constantly. Salad: In a salad bowl, combine the arugula, radicchio and endives. To Serve: Stir the dressing well, add just enough to moisten the greens, and toss to coat. Divide the greens among salad plates and top with apples and pecans. Serve immediately.
