I don't really know the answer, but these definitions are from Vegetarian

Times:

Soy Sauce: A dark, salty sauce used to flavor Asian dishes. Low-sodium

varieties are available in most supermarkets and natural food stores.

Tamari (tuh-MAH-ee): A naturally brewed soy sauce that is sugar-free, which

is also available wheat-free. Used as a condiment.

Is the " natural brewing " the difference?

Jennifer:

Tamari (or called Tamari soy sauce) is " real " soy sauce that is

fermented and aged using traditional methods. It has a richer taste

than other commercial soy sauces which are not fermented and aged.
