Low-sodium varieties are available in most supermarkets and natural food stores. Tamari (tuh-MAH-ee): A naturally brewed soy sauce that is sugar-free, which is also available wheat-free. Used as a condiment. Is the " natural brewing " the difference? It has a richer taste than other commercial soy sauces which are not fermented and aged.
