Guest guest Posted December 3, 2000 Report Share Posted December 3, 2000 * Exported from MasterCook * Spicy Vegetable Latkes Recipe By : Meals.com Serving Size : 16 Preparation Time :0:40 Categories : Chanukah\Hanukkah Potatoes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 medium potatoes -- peeled 1 onion -- finely chopped 3 tablespoons olive oil 1 pound fresh spinach, stemmed -- finely chopped 3 eggs -- beaten 2 teaspoons ground turmeric 2 teaspoons ground cumin 1/4 teaspoon cayenne pepper 2 garlic cloves -- peeled and minced 1/4 cup matzo meal 3/4 teaspoon salt 1/8 teaspoon pepper 1/2 cup oil -- for frying 1 cup sour cream Boil potatoes in salted water until tender. Drain and mesh well. Sauté onion in oil until soft. In batches, add spinach to onions and cook until spinach wilts, about 2-3 minutes. Drain excess liquid and place spinach in large bowl. Stir in eggs, turmeric, cumin, cayenne, garlic, matzo meal, salt and pepper. Stir in mashed potatoes. Heat oil in a large frying pan and add mixture by spoonfuls (three-inch pancakes). Fry until golden on both sides. Drain on paper towels. Serve with sour cream.
