White Bean Salad

Amount Measure Ingredient -- Preparation Method

2 tablespoons herb-flavored white wine vinegar

2 tablespoons olive oil

1/2 teaspoon Dijon mustard

1 clove garlic -- minced

1/4 teaspoon dried oregano

1/4 teaspoon dried basil

1 pinch freshly grated nutmeg

1 1/2 cups cooked navy beans

OR Great Northern beans

2 ripe tomatoes

1/2 red onion -- thinly sliced

 

In a jar, shake together the vinegar, oil, mustard, garlic, oregano, basil, and

nutmeg.

 

In a bowl, mix together the beans, tomatoes, and onion. Pour the dressing over

the bean mixture and toss gently to mix. Serve at room temperature.
