Peanut Lo Mein

Amount Measure Ingredient -- Preparation Method

1 1/2 cups light broth

1 pound broccoli -- chopped

1 5-oz can sliced water chestnuts -- drained

2 large carrots -- peeled and shredded

2/3 cup peanut butter

2 tablespoons low-salt soy sauce

2 teaspoons curry powder

12 ounces spaghetti -- drained and cooked

 

In wok or large skillet, heat broth with broccoli until just tender. Add

remaining ingredients, except spaghetti. Stir until peanut butter melts. Heat

until broccoli is cooked. Add hot spaghetti and toss well.
