Spicy Peanut Sauce

1/3 cup smooth peanut butter

2 tablespoons tamari soy sauce

2 tablespoons brown rice vinegar

1 teaspoon sugar

1/2 teaspoon crushed garlic

pinch cayenne pepper

1/4 cup water, more or less as needed

1/4 cup thinly sliced scallions, optional

 

Combine all the ingredients, except the water and scallions, in a small bowl,

and whisk together until emulsified and smooth. Graduallly whisk in enough

water to make a thick buut pourable sauce. Stir in the scallions, if using.

vegetables and grains. "
