Guest guest Posted November 29, 2000 Report Share Posted November 29, 2000 * Exported from MasterCook * Speedy Couscous And Veggie " Stir-Fry " Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 122 Serving Size : 1 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Mirkin's 20/30 Fat & Fiber Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups bouillon 1 cup whole-wheat couscous 16 ounces bagged frozen mixed stir-fry vegetables 2 tablespoons soy sauce 1/4 cup sherry or wine 1/2 teaspoon wasabi paste OR pinch of cayenne pepper -- (optional) Bring the bouillon to a boil in a small pot or microwave on HIGH in a microwave dish. Stir in the couscous, cover and let stand for 5 to 10 minutes or until couscous is soft. Fluff couscous with a fork. Meanwhile, combine the remaining ingredients in a large pot. Bring to a boil, reduce heat and simmer, covered, 6 to 8 minutes or until the vegetables are crisp-tender. Stir in the couscous and serve immediately.
