I served this at Thanksgiving and it went over pretty well, even with picky MIL.

We all love onions, no matter how you cook 'em.

Sweet Onion Casserole

1 tbsp unsalted butter

 

1 tbsp flour

 

1 cup vegetable broth

 

1/2 cup Fat-Free half-and-half or light cream

 

1/2 cup almonds -- slivered

 

3 cups sweet onions -Vidalia, Maui or Walla Walla -- peel & cut in slices

 

1/2 tsp kosher salt

 

1/2 tsp garlic-pepper seasoning

 

1 cup Roasted Garlic dry breadcrumbs -- or seasoned crumbs

 

1/2 cup Parmesan cheese -- freshly grated

 

1 tsp garlic-pepper seasoning

 

Preheat oven to 375°F.

 

In a saucepan, boil some water. Add onions and parboil for 4 minutes. Drain and

set aside.

 

In a saucepan over medium heat, melt butter and stir in flour. Add broth and

half-and-half.

 

Cook, stirring constantly, until thick and smooth. Add onions, almonds, salt,

and garlic-pepper.

 

Turn into a greased 1-1/2 qt casserole.

 

Mix breadcrumbs, cheese and garlic-pepper together in a small bowl. Sprinkle

evenly over top of casserole. Place casserole in a larger pan of water.

Carefully place in oven and bake at 375°F

 

for 30 minutes. Remove and let stand for 5 minutes before serving.
