Mushroom Gravy

1 cup sliced fresh mushrooms

4 teaspoons olive oil

2 tablespoons flour

1 cup vegetable stock

2 teaspoons vegetarian Worcestershire sauce

1/2 teaspoon dried oregano

1/2 teaspoon dried tarragon

 

Saute the mushrooms in 2 teaspoons of the olive oil and set them aside.

 

In a separate pan, stir the flour into the remaining 2 teaspoons of olive oil,

and stir over low heat for 1 minute. Slowly add the stock, stirring constantly

to avoid lumps. Bring to a boil, stirring constantly.

 

Remove the gravy from the heat and add the Worcestershire sauce and herbs. Add

the sauteed mushrooms.
