I diced up some veggie bacon and used it sort of like pancetta or something like that, in a pasta dish. It came out pretty good. Even DH thought it was ok. It gave a nice smokey flavor to the dish and I didn't have to use the real thing (which I can't find anywhere in my area anyway). * Exported from MasterCook * Spaghetti with " Bacon " and Tomato Sauce Recipe By : RisaG Serving Size : 4 Preparation Time :0:00 Categories : Pasta Soy Tomatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb spaghetti salt Sauce: 2 slices Yves Veggie Bacon -- diced small 1 clove garlic -- minced 1 shallot -- minced 1 14 oz can crushed tomatoes -- drained a bit 1 tsp Penzey's Italian Sausage seasoning 1/2 tsp salt 1/2 tsp black pepper Put a large pot of water up to a boil. When boiling, add salt and pasta. Cook according to package directions. Meanwhile, heat a skillet over medium-high heat. Add 1 tsp olive oil and the shallots and garlic. Saute until a little soft. Add veggie bacon and saute until browned a bit. Remove skillet from heat and place a small saucepan over the same burner. Add tomatoes and Italian Sausage seasoning*. Add veggie bacon mixture and heat through. Simmer for a few minutes. Remove from heat. When pasta is done, put in a large serving bowl. Top with sauce and some parmesan cheese. Pass extra cheese at the table if you wish. - - - - - - - - - - - - - - - - - - NOTES : Risa's notes: * If you don't have Penzey's Italian Sausage seasoning, sprinkle with some italian seasoning and a little ground fennel seed.
