Hummus With Herbs

Amount Measure Ingredient -- Preparation Method

3 cups canned -- drained chickpeas

1/2 cup lemon juice

1/4 cup tahini

4 cloves garlic -- minced

1 teaspoon salt

2 tablespoons minced fresh parsley

2 tablespoons minced fresh cilantro

2 tablespoons minced fresh dill weed

2 tablespoons minced red onion -- (optional)

 

Makes 3 cups. In a food processor or blender, puree chickpeas, lemon

juice, tahini, garlic and salt. Spoon into a medium bowl; stir in parsley,

cilantro, dill weed and onion.

 

Nutrition information per 2-tablespoon serving: Calories 50, Carbohydrates

7 g, Protein 2 g, Fat 2 g, including sat. fat 0 g, Cholesterol 0 mg,

Sodium 150 mg, Calcium 23 mg, Dietary fiber 1 g. Diabetic exchanges per

serving: 1/2 bread/ starch exch. and 1/2 fat exch.
