Kathleen * Exported from MasterCook * Commuter Burrito Recipe By : Healthful cooking by Mary Carroll, Star Tribune, 6/29/00 Serving Size : 4 Preparation Time :0:00 Categories : Healthful Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup cauliflower broken into small pieces 1/2 cup broccoli florets 1/2 cup radishes -- halved 1/2 cup cubed jicama 1/3 cup low-sodium tamari or soy sauce 2 tablespoons rice vinegar 1 teaspoon dark sesame oil 4 tortillas 1/4 cup grated part-skim mozzarella cheese This commuter burrito is my favorite sandwich for overseas flights. Lightly steam cauliflower, broccoli, radishes and jicama for 2 minutes, then drain. In a medium bowl, combine soy sauce, vinegar and oil. Add steamed vegetables; toss well, cover and marinate overnight. Drain well, then divide among tortillas. Sprinkle with cheese, and wrap tightly in plastic wrap. Nutrition information per serving: Calories 195, Carbohydrates 29 g, Protein 8 g, Fat 6 g, including sat. fat 1 g, Cholesterol 4 mg, Sodium 1040 mg, Calcium 120 mg Dietary fiber 3 g.
