Guest guest Posted November 28, 2000 Report Share Posted November 28, 2000 * Exported from MasterCook * Mediterranean Marinated Salad Recipe By : Healthful Cooking by Mary Carroll, Star Tribune 6/1/00 Serving Size : 6 Preparation Time :0:00 Categories : Healthful Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup water 1/2 cup fresh lemon juice 2 tablespoons olive oil 2 cloves garlic -- pressed 1/4 teaspoon ground black pepper 1 yellow bell pepper -- chopped 1 red bell pepper -- chopped 1 cup chopped broccoli florets 1 cup chopped cauliflower florets 1 cup cubed part-skim mozzarella cheese 1/4 cup pitted and minced Nicoise olives Serves 6. You can add beans or any other protein to this easy salad. In a large salad bowl, combine water, lemon juice, oil, garlic, pepper, bell peppers, broccoli, cauliflower, cheese and olives. Toss well to coat vegetables with sauce. Let stand at room temperature for 30 minutes.
