Vegetable Croquettes

Amount Measure Ingredient -- Preparation Method

1 pound broccoli -- chopped

1/4 pound green beans -- chopped

2 carrots -- chopped

1 onion -- finely chopped

2 cloves garlic -- minced

2 cups fresh bread crumbs -- see Note*

1/4 cup unbleached flour

2 tablespoons soy milk

1 teaspoon dried basil

salt & black pepper to taste

2 tablespoons vegetable oil

 

Steam the broccoli, green beans, and carrots until tender. Place the steamed

vegetables in a food processor with the onion and garlic and puree. Transfer

the mixture to a bowl. Mix in the bread crumbs and flour. Stir in the soy milk

and basil, and season with salt & pepper. Refrigerate mixture for at least an

hour.

 

Form the mixture into patties (8). Heat the oil in a large frying pan and saute

the patties on each side until they are browned. Drain them on paper towels and

serve with salsa or ketchup.
