Grind the flaxseed in an elctric coffee grinder. Pour the ground seeds into a medium-size mixing bowl. Add the whole wheat pastry flour, sugar, soy flour, cocoa powder, and baking powder. Stir with a wire whisk until thoroughly combined. Pour the soy milk into a small bowl. Add the molasses and vanilla. Stir. Pour into the dry ingredients. Stir to form a batter. Continur stirring until the batter bubbles and thickens. Spoon 2-tablespoon-size mounds of cookie batter onto a nonstick or oiled cookie sheet, about eight evenly spaced cookies on a sheet. Bake for 15 minutes, until the bottoms of the cookies are lightly browned and the cookies have a cakelike texture. Description: " Like a small, round, cakelike brownie.
