2/3 cup whole wheat pastry flour

1/2 cup soy flour

3/4 cup unsweetened cocoa powder

3/4 cup sugar

1 1/2 teaspoons baking powder

1/3 cup soy milk

1 cup barley malt

1 tablespoon vanilla extract

 

Preheat the oven to 325F.

 

Place the whole wheat flour, soy flour, cocoa powder, sugar, and baking powder

in a medium-size mixing bowl. Stir with a wire whisk until thoroughly combined.

 

Place the soy milk, barley malt, and vanilla in an electric blender. Grind the

flaxseed in an electric coffee grinder 1/3 cup at a time. Add to the blender.

Blend until all of the ingredients are thoroughly combined and the mixture

begins to bubble.

 

Pour the liquid mixture into the dry ingredients. Stir until combined. Pour

the batter into a 9 x 9-inch nonstick or oiled baking pan. Bake for 25 minutes,

until the edges are browned and the middle springs back to the touch. Cool.

Cut into nine 3-inch squares to serve.
