Vegetarian Way--Deviled Black Beans

As Denise mentioned the other day, this book is not really a " cookbook " , but is

more of a vegetarian nutrition guide. However, there are recipes in the back

which are pretty good. Ms. Messina is a vegetarian dietian, and later wrote

" The Convenient Vegetarian " which has been a cookbook of the week. I often

refer people to " The Vegetarian Way " to answer their nutritional questions.

Here's the first recipe I have from the book:

Deviled Black Beans

 

Recipe By :The Vegetarian Way, Virginia Messina and Mark Messina

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 teaspoons olive oil -- or vegetable oil

1 teaspoon chili oil -- or other spicy oil

1 large red onion -- thinly sliced

1 3/4 cups vegetable stock -- or 1 14.5 oz can

2 cans black beans -- drained

1 4 oz can chopped green chiles

2 teaspoons prepared mustard

salt & black pepper to taste

1 tablespoon cornstarch

 

In a large nonstick saucepan, heat the oils over medium heat. Add the onion and

saute until it is very well browned.

 

Set aside 1/4 cup of the stock. Add the remaining stock, beans, chiles,

mustard, and salt & pepper to the onion. Heat to boiling.

 

Stir the cornstarch into the reserved broth. Add the mixture to the beans and

cook, stirring, until the sauce is clear and thickened, about 5 minutes. Serve

over rice, barley, or other grains.
