Guest guest Posted November 26, 2000 Report Share Posted November 26, 2000 * Exported from MasterCook * Minted Orange And Red Onion Salad Recipe By : Healthful Cooking, Mary Carroll, Star Tribune, 7/20/00 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Salads, Vegetable Vegetables Healthful Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 medium red onion -- thinly sliced 2 tablespoons Sherry vinegar 1/4 cup fresh mint -- coarsely chopped 1/4 teaspoon salt 2 large navel oranges -- peeled and sectioned -- (white pith removed) 1 large watercress bunch 1 thick stems removed 2 tablespoons olive oil Salt -- pepper In a large bowl, combine onion, vinegar, mint and salt. Toss well. Let stand 5 minutes. Add oranges, watercress and oil. Toss well. Season to taste with salt and pepper.
