Cheese-Herb Bread

1 1/4 cups flour

1 tablespoon chopped fresh basil

1 teaspoon chopped fresh tarragon

1 teaspoon chopped fresh sage

1 teaspoon chopped fresh marjoram

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup bran flakes cereal

3/4 cup low-fat buttermilk

1/2 cup shredded low-fat sharp Cheddar cheese

1/4 cup vegetable oil

1/4 cup sugar or maple syrup

1 egg

 

Makes 1 loaf or 15 servings.

 

This basic low-fat quick bread is redolent with tarragon and sage. Toast

slices to serve with soup or salad.

 

Preheat oven to 400 degrees. In a large bowl, combine flour, basil,

tarragon, sage, marjoram, baking powder, baking soda and salt. Add cereal

and toss to coat.

 

In another bowl, whisk together buttermilk, cheese, oil, sugar and

egg. Combine contents of both bowls, folding until just

incorporated. Spoon batter into lightly oiled and flour-dusted 2-quart

loaf pan.

 

Bake for 25 minutes, then lower heat to 300 degrees and bake 15 minutes

more until toothpick inserted in center of loaf comes out clean.
