Basic Lower-Fat Garlic Croutons

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

2 cloves garlic -- finely minced

1/2 teaspoon dried sage

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano or marjoram

1/4 teaspoon ground paprika

1 large loaf French bread

sliced into 24 rounds

 

Salt, ground black pepper, to taste

 

Makes 24 large croutons.

 

Serve the following basic crouton, similar to bruschetta, alongside a

creamy yogurt dip, or spread with a low-fat vegetable pâte.

 

Preheat oven to 300 degrees. In a small saucepan, combine oil, garlic,

sage, thyme, oregano and paprika; cook, stirring, over medium-high heat,

for 1 minute. Do not let garlic brown. Remove from heat.

 

Place bread slices on 2 large ungreased baking sheets. Brush herb mixture

lightly on bread rounds. Bake until crisp and lightly browned, about 15 to

25 minutes. Sprinkle with salt and pepper to taste.
