Guest guest Posted November 23, 2000 Report Share Posted November 23, 2000 * Exported from MasterCook * Notuna salad (vegan) Recipe By : from The Vegetarian Way by Virginia and Mark Messina Serving Size : 6 Preparation Time :0:00 Categories : Salads Sandwiches Meat-Poultry-Fish Substitutes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 c cooked chickpeas**, or 2 16-oz. cans -- well drained 1/2 c coarsely chopped celery 1/2 c finely chopped onion 2 tbsp fresh lemon juice 1/2 c eggless mayonnaise 1 tbsp dried powdered kelp salt and black pepper -- to taste Place the chickpeas in a food processor and process until coarsely chopped. Transfer them to a bowl. Add the rest of the ingredients and mix. Serve stuffed into pita pockets with chopped tomatoes adn lettuce. Makes enough for 6 sandwiches. - - - - - - - - - - - - - - - - - - NOTES : This chickpea salad has a texture and taste that is reminiscent of tuna salad.
