Indian Pudding

16 ounces soft tofu

1 tablespoon blackstrap molasses

1 tablespoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1 tablespoon vanilla extract

2 tablespoons frozen apple juice concentrate

2 tablespoons maple syrup

 

Preheat the oven to 400F.

 

Place all of the ingredients in a food processor with the S blade inserted.

Process until smooth and creamy. Taste. If needed, add more cinnamon. Place

in a casserole dish and cover. Bake for 10 minutes, until hot.
