Guest guest Posted November 23, 2000 Report Share Posted November 23, 2000 * Exported from MasterCook * Low-Fat White Sauce Recipe By : from The Vegetarian Way by Virginia and Mark Messina Serving Size : 1 Preparation Time :0:00 Categories : Sauces Lowfat Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tbsp margarine 2 tbsp white flour 1 c plain low-fat soymilk salt and white pepper -- to taste freshly grated nutmeg Melt the margarine in a saucepan over low heat. Stir in the flour to make a thick paste, and cook, stirring rapidly, for 1 minute. Pour in the soymilk very slowly, stirring to avoid lumps. Cook and stir with a wooden spoon over low heat for several minutes until the sauce is thick. Season with salt, pepper and nutmeg. Makes 1 cup. - - - - - - - - - - - - - - - - - - NOTES : This white sauce is rich and creamy. Serve it over vegetables or blend it with cooked, pureed vegetables to make a savory cream soup or a sauce for grains. Nutr.
