Guest guest Posted November 23, 2000 Report Share Posted November 23, 2000 * Exported from MasterCook * Pumpkin Apple Bread (vegan) Recipe By : from The Vegetarian Way by Virginia and Mark Messina Serving Size : 10 Preparation Time :0:00 Categories : Breads Breakfast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 c white flour 1 c whole wheat pastry flour 1 tbsp soy flour 1 tsp baking soda 1 tsp baking powder 1/8 tsp salt 1/2 tsp ground cinnamon 1/4 tsp ground allspice 1/2 tsp ground nutmeg 1/4 c vegetable oil 1/2 c sugar 1/2 c plain soymilk 3/4 c canned pumpkin 2 sweet apples, such as Delicious -- finely chopped Preheat the oven to 350° F. Mix together the flours, baking soda, baking powder, salt, cinnamon, allspice, and nutmeg in a large bowl. In a separate bowl, beat together the oil and the sugar. Addd the soymilk and pumpkin. Stir the dry ingredients into the pumpkin mixture and mix thoroughly. Fold in the apples. Bake in an oiled loaf pan for 45 minutes. - - - - - - - - - - - - - - - - - - NOTES : This is a delicious reduced-fat quick brea that is just brimming with the goodness of apples and nutritious pumpkin.
