Banana French Toast (vegan)

2 very ripe bananas

1 c plain soymilk

8 slices whole wheat bread

 

In a blender, blend the bananas and soymilk until completel smooth. Pour the

mixture into a large bowl. Dip the bread into this mixutre and cook on a

lgihtly oiled, hot griddle until just browned on each side.

NOTES : This unusual recipe for French toast is so healthy and so much fun. The

creamy banana batter produces the most delectable French toast we've ever

tasted.

Quick Coffee Cake (vegan)

Amount Measure Ingredient -- Preparation Method

1 c unsifted all-purpose flour

1 c unsifted whole wheat flour

3/4 c old-fashioned rolled oats

1/3 c packed light brown sugar

1 tbsp baking powder

2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

pinch salt

1/2 c margarine

1 c unsweetened apple juice

 

Preheat the oven to 350° F. Grease and flour a 9-inch square baking pan.

 

In a large bowl, combine the flours, 1/2 cup of the oats, sugar, baking powder,

cinnamon, nutmeg, ginger, and salt. Remove 1/2 cup of the mixture to a cup or

small bowl, and add the remaining 1/4 cup oats. Cut in 2 tablespoons of the

margarine; set the mixture aside.

 

Cut the remaining margarine into the flour mixture in the large bowl. Stir in

the apple juice until well combined. Pour the batter into the prepared pan.

Top with the reserves oat mixture.

 

Bake the cake about 40 minutes, or until a knife inserted in center comes out

clean. Let it cool to room temperature.
