Chocolate Chip Cake (vegan)

1 1/2 c white flour

1 c sugar

1 tsp baking soda

1/8 tsp salt

5 tbsp vegetable oil

1 tsp vanilla extract

1 tbsp cider vinegar

1 c cold water

1 c semisweet chocolate chips

 

Preheat the oven to 350° F.

 

In a large mixing bowl, stir together the flour, sugar, baking soda, and salt.

In a separate bowl, stir together the oil, vanilla, vinegar and water. Mix and

pour the liquid over the dry ingredients. Stir well to combine.

 

Pour the batter into an ungreased 8-by-8-inch pan. Sprinkle the chocolate chips

over the top. Bake for 35 minutes.

 

Serves 16.

NOTES : This cake is so easy to make and is always popular. Most of the

chocolate chips sink to the bottom, where they form a fudgy layer.

Chocolate Cream Frosting (vegan)

Amount Measure Ingredient -- Preparation Method

1 1/4 c powdered sugar

2 tbsp unsweetened cocoa

2 tbsp margarine -- softened

pinch salt

2 tbsp plain or vanilla soymilk

1 tsp vanilla extract

 

Cream together the sugar, cocoa, margarine, and salt. Add the soymilk and

vanilla to make a creamy, spreadable consistency.

 

Makes enough to frost an 8 " X 8 " cake.

NOTES : This is an old-fashioned frosting that is easy to make

and that turns any cake into a delectable treat.

Quick White Frosting (vegan)

Amount Measure Ingredient -- Preparation Method

4 tbsp margarine -- softened

2 c sifted powdered sugar

1/4 tsp salt

1 tsp vanilla extract

3 tbsp plain soymilk -- up to 4 tablespoons

 

Cream the margarine and powdered sugar together. Add the salt, vanilla, and

soymilk, and mix until completely smooth. Add more powdered sugar or more

soymilk to get the consistency you want.

 

Makes about 1 cup.

NOTES : Here is a frosting with endless possibilities. For something different,

omit the vanilla and instead add 2 tablespoons of lemon or orange juice

or a few tablespoons of apricot-flavored liqueur, and use slightly less

soymilk.
