Peanut Butter Balls (vegan)

Amount Measure Ingredient -- Preparation Method

1/4 c low-fat granola

2 tbsp brown sugar

1/4 c sunflower seeds

1/4 c raisins

1/4 c finely shredded carrots

3/4 c peanut butter

 

Mix together the granola, brown sugar, sunflower seeds, raisins, and carrots.

Blend in the peanut butter a little at a time to form a smooth mixture. Store

the mixture in the refrigerator overnight. Form into balls.

 

Makes 20 balls.

NOTES : Wrap these in wax papaer and tuck them into your backpack when you go

hiking or camping. They are a high-energy treat and perfect pick-me-up after

strenuous activities.
