Pilaf with Carrots and Raisins (vegan)

4 tbsp maple syrup

3 c vegetable stock

1 1/4 c carrots -- thinly sliced

2 tbsp raisins

1 tbsp vegetable oil

1 1/2 c basmati rice

1/2 tsp salt

1/4 tsp ground cardamom

1/4 tsp ground cinnamon

1/4 c ground nutmeg

freshly grated nutmeg

 

Mix together the maple syrup and vegetable stock in a medium saucepan. Cook

over low heat for 2 to 3 minutes.

 

In a large skillet, saute the carrots and raisins in the oil for 10 minutes.

Add the rice to the carrot mixture, and stir to coat the grains with the oil.

Stir in the syrup and stock and the remaining ingredients except the freshly

grated nutmeg. Heat the mixture to boiling; reduce the ehat. Simmer, covered,

for 35 to 40 mintues, until all the stock is absorbed. Serve sprinkled with

freshly grated nutmeg.

NOTES : The sweetness of maple syrup and raisins is in pleasant contrast to the

spicy Indian flavors in this dish. With a salad or a cooked vegetable on the

side, this makes a full meal.
