Guest guest Posted November 23, 2000 Report Share Posted November 23, 2000 * Exported from MasterCook * Apricot-Walnut-Wheat Berry Salad (vegan) Recipe By : from The Vegetarian Way by Virginia and Mark Messina Serving Size : 10 Preparation Time :0:00 Categories : Entrées Fruit Grains Main Dishes Rice Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 c cooked wheat berries 3 c cooked brown rice 1 tsp grated orange zest 1 tbsp orange juice concentrate 1 tbsp white wine 1 tbsp white wine vinegar 4 tbsp vegetable stock 2 tbsp vegetable oil 1 navel orange -- peeled 1 sm head caulifower 3/4 c dried apricots -- coarsely chopped 6 green onions, thinly sliced, including -- some of the green 1 c chopped walnuts 1 tsp dried oregano salt and black pepper -- to taste Mix together the wheat berries and rice in large bowl. Combine the orange zest, orange juice concentrate, wine, wine vinegar, stock, and oil in a jar with a tight-fitting lid. Shake to combine and pour over the wheat berries and rice. Place the orange in a food processor, and process until it is in tiny chunks. Stir into the grains. Cut the cauliflower into florets, and steam them over boiling water for 5 - 7 minutes, or until just tender. Add the cauliflower, apricots, green onions, walnuts, and oregano to the grains. Add salt and pepper. - - - - - - - - - - - - - - - - - - NOTES : This is a beautiful main-dish salad. The sweetness of orange juice and dried apricots is a perfect complement to the heartiness of the grains in this dish. Nutr.
