Risa, This one made me think of you. Cucumber pureed in a hot sauce

is a new idea to me. Fortunately it calls for canned tomatoes so I

don't have to wait for summer to try this.

Mario's Hot Sauce

Amount Measure Ingredient -- Preparation Method

1 cucumber

3 jalapenos -- to 8

- depending on how hot you like it

2 medium green peppers

1 red onion

2 cans tomatoes -- 12 oz each

- drained

or 4 to 5 fresh seeded tomatoes

1/2 cup finely chopped fresh coriander -- or parsley *

* Mario says never substitute dried herbs for this.

 

Yield: 4 to 5 cups

 

Blend the cucumber and jalapenos in a blender until you have a very

smooth liquid. chop the green pepper, onion, and tomatoes very

finely. Put in a bowl and stir in the cucumber/jalapeno mixture along

with the chopped coriander or parsley. Eat this immediately.

NOTES : Mario is a very picky eater. he won't eat a thing unless it

has hot sauce on it. He perfected the following recipe, and we both

swear by it.

 

Put a touch of sweetener in the blender with the cukes and pepper if

you like your sauce sweet.
