Mushroom Gravy

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 small onion -- finely chopped

2 cups chopped mushrooms

2 tablespoons soy margarine or oil -- to 3

Big handful of flour

- (OK, about 1/3 cup)

2 cups soymilk or milk -- to 3 cups

- depending on how thick you want it

tamari soy sauce -- to taste

salt and pepper -- to taste

Yield: 5 to 6 cups

 

Saute the onion and mushrooms in the margarine or oil until soft. Add

the flour and stir over low heat until a paste forms and the flour

has had time to brown a little.

 

Add the soymilk and continue stirring with a whip or a fork until the

mixture thickens. Add more or less liquid depending on the

consistency you want. A touch of tamari, salt, and lots of black

pepper and it's ready to pour over rice, potatoes, biscuits, and even

toast!
