Garlic Grits

Amount Measure Ingredient -- Preparation Method

1 cup grits

4 1/2 cups water

1/2 teaspoon salt

1/2 cup soy margarine

1 egg

- or egg replacer

3/4 cup milk or soymilk

2 cloves garlic -- smashed and chopped

3/4 cup grated sharp cheddar cheese -- to 1 cup

- or cheese substitute

Cook the grits in the water and salt over low heat until mushy. Stir

in the margarine, egg, and milk. Next, stir in the garlic, cheese,

and whatever else you want to add. Obviously, you have to stir this

up quite a lot. Preheat the oven to 350F. Pour into a 9x13 inch

greased baking dish, and bake for 35 minutes.

NOTES : What are grits anyway? Usually the grits you get from the

grocery store are hominy grits -- degerminated corn that has been

finely ground on steel rollers. Stone ground grits are simply whole

grain corn, ground very coarsely on stones. Whenever you travel in

the South, be sure to buy a big bag of stone ground grits You

couldn't find a better souvenir anywhere.
