Sweetwater Scalloped Tomatoes

Amount Measure Ingredient -- Preparation Method

5 slices vegetarian bacon -- to 6 slices

oil or soy margarine as needed

1 small onion -- chopped

1/3 cup bread crumbs

3 medium tomatoes -- to 4

 

Cook the vegetarian bacon in a little of the oil, and set aside. Cook

the onion in same oil as the bacon. When the onions are done, add the

bread crumbs and let cook a few more minutes.

 

Arrange the sliced tomatoes on a pie plate. Cover with the onion and

bread crumb mixture and then the crumbled pieces of vegetarian bacon

Put under the broiler for just a few minutes until the tomatoes are

heated through.

NOTES : In about the second week of August, my house is taken hostage

by tomatoes. They cover all the counters, the washer, the dryer, the

kitchen table, the window sills, the hood of whichever car is in the

carport -- they are everywhere you look. I'm always looking for a

new way to use them. Here is a great one.
