Quick Apple Crumble

Crumble Topping

3/4 cup flax seed

1/4 cup chopped walnuts or almonds

1/4 cup maple syrup

2 teaspoons ground cinnamon

1 teaspoon grated orange peel

Filling

5 apples -- grated (don't peel)

1 tablespoon frozen apple juice concentrate

1 tablespoon frozen orange juice concentrate

2 teaspoons grated orange peel

2 teaspoons ground cinnamon

1 tablespoon cornstarch

1/4 cup raisins

 

Preheat the oven to 300F.

 

To prepare the topping, grind the flaxseed iin an electric coffee grinder in two

batches. Place in a mixing bowl. Add the nuts, maple syrup, cinnamon, and

orange rind. Mix thoroughly. Spread on a cookie sheet. Bake for 5 minutes.

Remove from the oven and stir with a spatula. Bake for 5 more minutes, until

toasted.

 

While the crumble topping bakes, prepare the filling: Place all of the filling

ingredients in a heavy-bottomed pot. Mix until the apple is thoroughly combined

with the flavorings and cornstarch. Cook over medium-high heat, stirring

occasionally, until the aple is heated and a sauce has formed. Remove from the

heat. Pour into a 9-inch pie plate.

 

Spoon the crumble over the fruit. Serve warm or cold.

1/4 cup maple syrup

Filling

2 16 oz packages frozen pitted cherries

3/4 cup frozen apple juice or white grape juice

concentrate

3 tablespoons cornstarch

1/4 cup frozen apple juice concentrate -- thawed

 

Preheat the oven to 300F.

and frozen juice concentrate in a pot. Cover and cook over medium-high heat.

Dissolve the cornstarch in the 1/4 cup pf thawed juice concentrate. Stir it

into the cooking fruit. Continue stirring until the mixture thickens and

becomes translucent. Remove from the heat. Pour into a 9-inch pie plate.

 

Spoon the crumble over the fruit. Serve warm or cold.
