To prepare the topping, grind the flaxseed iin an electric coffee grinder in two batches. Place in a mixing bowl. Add the nuts, maple syrup, cinnamon, and orange rind. Mix thoroughly. Spread on a cookie sheet. Bake for 5 minutes. Remove from the oven and stir with a spatula. Bake for 5 more minutes, until toasted. While the crumble topping bakes, prepare the filling: Place all of the filling ingredients in a heavy-bottomed pot. Mix until the apple is thoroughly combined with the flavorings and cornstarch. Cook over medium-high heat, stirring occasionally, until the aple is heated and a sauce has formed. Remove from the heat. Pour into a 9-inch pie plate. Spoon the crumble over the fruit.
