Noodle Kugel

6 ounces medium egg noodles

1 cup raisins

2 tablespoons ground cinnamon

1 1/2 teaspoons ground nutmeg

2 tablespoons vanilla extract

1/3 cup maple syrup

28 1/2 ounces silken tofu

 

Preheat the oven to 250F.

 

Bring 6 cups of water to a boil. Place the noodles in the boiling water. Cook

for 5 minutes. Drain. Rinse with cool water. Place in a medium-size mixing

bowl. Stir in the raisins.

 

Place the remaining ingredients in a food processor with the S blade inserted.

Process until smooth and creamy. Pour into the bowl with the noodles and

raisins. Stir until combined.

 

Turn into a 9 x 9-inch nonstick or oiled baking pan. Place this pan in another,

larger baking pan. Pour 1/2 inch of water into the outer pan. Bake for 1 1/2

hours, until the custard sets. Cool. Cut into nine 3-inch squares.
