We had this for dinner tonight. But instead of tortellini, we use ravioli. I

added some chopped fresh spinach and a western spice blend to perk it a bit.

Cilantro. I don't cook anything without fresh cilantro.

 

Thank you for sending this one! The western spice blend is attached. It's a

mild chili powder mixture. Very versatile.

Western Spice Blend

 

Recipe By :Cheese Factory Restaurant, Wisconsin Dells

Amount Measure Ingredient -- Preparation Method

1 tablespoon dried oregano

1 tablespoon dried thyme

1 tablespoon onion powder

1 tablespoon ground black pepper

1 tablespoon ground white pepper

2 tablespoons cayenne pepper

2 tablespoons ground fennel seed

3 tablespoons paprika

3 tablespoons garlic powder

 

Combine all ingredients. Store in a sealed container. Makes almost 3 ounces.

 

TIPS: * Combine and grind briefly in a coffee grinder. *Substitute aniseed for

fennel. *Use rounded tablespoons full when substituting seed for ground spice.

*Instead of " tablespoons " use teaspoons to make enough to fill half a standard

spice jar.

beans, soups, stews or rice. We found this formula in a cookbook from a

restaurant in Wisconsin Dells. Tried it. Liked it. It's now in a shaker next to

my other favorite: Cre-ole.
