Onion Shortcake

Amount Measure Ingredient -- Preparation Method

4 onions -- chopped; to 5

1/2 cup oil

Biscuit dough:

2 cups whole wheat flour

4 teaspoons baking powder

1/2 teaspoon salt

4 tablespoons oil or soy margarine

1/2 cup soymilk -- to 2/3

3 tablespoons soy margarine

2 tablespoons chickpea flour

- or rice flour or whole wheat flour

1 tablespoon miso -- dissolved in

1 cup soymilk or water

 

Saute the onions in the 1/2 cup oil; when they are soft, set them

aside until you are ready for them.

 

Mix the dry ingredients for the biscuit dough, cutting in the oil or

margarine with 2 knives. Add the soymilk and stir just enough to

combine the ingredients, then turn the dough out and knead a few

times. Press this into a greased 8x8 inch casserole dish, and spread

the cooled onions over the dough.

 

Preheat the oven to 400F. To make the sauce, melt the 3 tablespoons

margarine in the same pan used to cook the onions. Add the 3

tablespoons four, and make a paste. Add the dissolved miso to the

paste, and stir it ins; remove from the heat. You can add a touch of

tamari if you have it. Pour this over th onions, and bake for about

15 to 20 minutes or until the dough is done.

NOTES : This is a good dish to have instead of mashed potatoes and
