Great Grandmother's Shortcake

2 cups unbleached all-purpose or pastry flour

1 teaspoon baking powder

1 pinch salt

2 tablespoons honey or sugar

1/2 cup soy margarine

1/2 cup soymilk -- or milk

Sift the dry ingredients together, then work the margarine in with a

fork until crumbly. Add the milk and quickly stir with a fork until

the dough leaves the side of the bowl. Roll the dough as thinly as

possible, and cut out with a large cookie cutter. If you don't have

one, you can use a wide-mouth jar.

 

Preheat the oven to 450F. Barely oil the top of a cut-out round, and

put another one on top of it. Place on a greased cookie sheet. Do

all these little rounds the same way, 2 high. Bake for 8 to 12

minutes until brown. Remove from the oven and separate the tops from

the bottoms immediately.

NOTES : These are glorious little things, not at all like you

remember from the grocery store. I like to serve a big bowl of

berries and a big bowl of these little shortcakes.so that my guests

can stack them four high if they like (and they do).
