Place the tofu and tamari in a food processor with the S blade inserted. Process for 2 minutes, until smooth and silky. Spray four 9-inch cake pans with oil. Spoon the tofu mixture into the center of each, dividing the mixture evenly. Using the back of a soup spoon, carefully spread the tofu mixtuure, making expanding circles and gradually moving the mixture toward the edge of the pans. Do not allow the mixture to touch the edge of the cake pans. Distribute the batter as evenly as possible, leaving the outer edge of the batter slightly thicker than the middle. This will prevent uneven cooking or spotty burning. Bake for 8 to 10 minutes, until the edges of the crepes are brown, the batter has a crepelike texture, and the crepes can be folded without breaking. Remove from the oven before the edges become crisp. While still in the cake pans, gently fold the crepes in half and then in quarters. Using a spatula, move the folded crepes to a serving plate. Unfold. Spoon filling down the center of each crepe. Fold the crepe over the filling. Serve. Makes 2 servings of 2 crepes.
