All I have left from this book are desserts - it's kind of late for

Thanksgiving, but maybe Christmas . . . or any day.

Apple-Cinnamon Sauce

9 1/2 ounces silken tofu

1 teaspoon orange extract

1 teaspoon vanilla extract

1 tablespoon ground cinnamon

2 tablespoons apple butter

1/2 cup apple juice concentrate

 

Place all of the ingredients in a food processor with the S blade inserted.

Process until smooth. Taste. Iff neede, add more orange extact, vanilla, or

cinnamon.

 

Description:

" Another simple sauce to pour over pies and crumbles. "

" 1 cup "

Banana-Strawberry Sauce

19 ounces silken tofu

1 cup strawberries, fresh or frozen

1 banana -- sliced

1/2 cup soy milk

1/2 cup frozen white grape juice concentrate

1/2 teaspoon banana extract

1 teaspoon vanilla extract

 

Place all of the ingredients in an electric blender. Blend until smooth and

creamy. Taste. If needed, add more banana extract or vanilla.

 

Description:

" Pour on this creamy pink sauce and transform cold cereal into a

morning dessert, or fruit salad into a protein-rich meal "

1/4 cup soy milk

1 tablespoon vanilla extract

3 tablespoons maple syrup

1 teaspoon ground cardamom

1 tablespoon cashew butter

 

Place all of the ingredients in a food processor with the S blade inserted.

Process until smooth and creamy. Taste. If needed, add more vanilla.

 

Description:

" Use this all-purpose topping on any dessert that screams out for a

dab of some sweet, white, creamy stuff--pumpkin pie, walnut pie, or

pudding. "
