Marinated Artichoke Kebabs

12 jarred marinated halved artichoke hearts

with marinade

12 cubes part-skim mozzarella cheese -- (1/2-inch)

3 small dry-packed sun-dried tomatoes -- cut into fourths

 

Serves 6.

 

These salad kebabs are a snap to assemble and very delicious. Make them up

the night before or allow at least 1 hour marinating time before serving.

 

In large bowl, combine artichoke hearts, mozzarella cheese and

tomatoes. Cover and refrigerate overnight or at least 1 hour.

 

To assemble, thread 1 artichoke, 1 piece dried tomato and 1 cube cheese

onto each small skewer or toothpick, wedging tomato between two larger

items. Brush with marinade and arrange in shallow container.
