Tortellini Bean Soup

Amount Measure Ingredient -- Preparation Method

2 teaspoons vegetable oil

4 each carrot -- chopped

1 each onion -- chopped

2 each clove garlic -- minced

1 teaspoon dried basil

1 each bay leaf

3 cups vegetable broth

1 19oz can tomatoes, canned

8 ounces tortellini, cheese-filled

1 cup black beans -- canned

1/4 teaspoon pepper

3 tablespoons parmesan cheese -- grated

 

In large heavy saucepan, heat oil over medium heat; cook carrots, onion, garlic,

basil and bay leaf, stirring occasionally, for about 5 minutes or until onion is

softened.

 

Add stock and tomatoes, breaking up with back of spoon; bring to boil.

 

Add tortellini; return to boil. Reduce heat to medium-high; cook, stirring

occasionally, for about 10 minutes or until pasta is almost tender but firm

 

Stir in beans and season with pepper; heat until simmering. Discard bay leaf.

 

Ladle into bowls; sprinkle with parmesan cheese.
