Spinach Quiche

4 garlic cloves -- quartered

24 ounces extra-firm tofu

1/2 teaspoon turmeric

1/2 teaspoon gound nutmeg

3 tablespoons Dijon mustard

1 onion -- chopped

20 ounces fresh spinach -- steamed and chopped

OR

20 ounces frozen chopped spinach -- thawed

 

Preheat the oven to 350F.

 

Place the garlic in a food processor with the S blade inserted. Mince. Break

the tofu into small pieces and place in the food processor. Add the turmeric,

nutmeg, and mustard. Process for 3 minutes, until smooth.

 

Turn into a medium-size ixing bowl. Add the onion. Squeeze all of the water

out of the spinach. Add. Mix until thoroughly combined. Turn into a 9-inch

nonstick or oiled pie plate. Bake for 1 hour, until set. Unmold oonto a dinner

plate. Allow to cool for 5 minutes before serving.
