Cut away the core and leave the peels on. Heat the oil or 4 tablespoons margarine in a skillet over low heat. When it's hot, add the apples and stir around. While they are cooking,mix the maple syrup or brown sugar, miso and lemon juice into a paste and add either that or the 1/3 to 1/2 cup brown sugar and lemon juice to the apples. Usually about no I throw in a bout 1/2 stick margarine just to be grandmotherly. Cover and cook over low heat for about an hour or so. I normally leave the jar of syrup and the lemon by the stove and add as I lick the spoon.
