Aunt Josephina's Fried Apples

Amount Measure Ingredient -- Preparation Method

Use either:

8 thin-skinned green apples -- to 10

1 teaspoon toasted sesame oil -- to 2 tsp

2 tablespoons honey

3 tablespoons maple syrup or brown sugar

1 tablespoon dark miso

soy margarine -- to taste

- OR:

8 tart apples -- to 10

4 tablespoons soy margarine

Juice of 1 lemon

1/3 cup brown sugar -- to 1/2 cup

Cut the apples into either quarters or nice-sized slices. Cut away

the core and leave the peels on. Heat the oil or 4 tablespoons

margarine in a skillet over low heat. When it's hot, add the apples

and stir around. While they are cooking,mix the maple syrup or brown

sugar, miso and lemon juice into a paste and add either that or the

1/3 to 1/2 cup brown sugar and lemon juice to the apples. Usually

about no I throw in a bout 1/2 stick margarine just to be

grandmotherly. Cover and cook over low heat for about an hour or so.

Stir to keep from sticking when you have to.

NOTES : The sweetener, miso, and lemon can be altered to your

individual taste. I normally leave the jar of syrup and the lemon by

the stove and add as I lick the spoon. Patsy says this tastes best

eaten in big bites right from the skillet -- or one bite at a time,

snatched at weak moments straight from the fridge.
